- Servings: 2
- Difficulty: Very easy
Ingredients
For the salad:
- 1½ cups cooked chickpeas (one 400 g can, drained and rinsed)
- 125 g fresh mozzarella, cut into bite-sized cubes
- 2 cups baby spinach or lamb’s lettuce (corn salad)
- 1 medium cucumber, cut into chunks
- 10–12 cherry tomatoes, halved
- 2 tablespoons fresh parsley, chopped, plus a sprig for garnish
For the lemon olive oil dressing:
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- ½ teaspoon salt (or to taste)
- ½ teaspoon freshly ground black pepper
- 1 small garlic clove, minced (optional)
- ½ teaspoon honey (optional)
- A pinch of red chili flakes (optional)
Method
Step 1: Prepare the chickpeas. Drain the canned chickpeas and rinse them well under cold water. Pat them dry with a clean towel. If you are using dried chickpeas, soak overnight, then boil for 45–60 minutes until soft, and let them cool.
Step 2: Wash and dry the greens. Rinse the spinach or lamb’s lettuce and dry it thoroughly. Wet leaves dilute the dressing and make the salad watery.
Step 3: Chop the vegetables. Cut the cucumber into thick chunks and halve the cherry tomatoes. Chop the parsley finely.
Step 4: Prepare the mozzarella. Drain the mozzarella and pat it dry. Cut it into small cubes and keep it chilled until serving.
Step 5: Make the dressing. In a small bowl or jar, whisk the olive oil, lemon juice, salt, pepper, garlic, honey and chili flakes until combined.
Step 6: Arrange the salad. Spread the greens in a wide bowl. Arrange the chickpeas, cucumber, mozzarella and tomatoes in separate sections on top, as in the picture. Place a sprig of parsley in the center.
Step 7: Dress and serve. Drizzle the dressing over the salad and finish with a little black pepper. Toss gently just before eating so the mozzarella stays intact. Serve with lemon wedges.
Tips for the Best Salad
- Rinse canned chickpeas well to remove the tinned taste and excess salt.
- Warm the chickpeas slightly in a pan with a little olive oil and cumin for extra flavor.
- Use ripe tomatoes. They make the biggest difference in a salad this simple.
- Dress at the last minute to keep the greens crisp.
- Use good olive oil. Its flavor shows in a no-cook salad.
- Pat the mozzarella dry so it does not make the salad watery.
Variations
- Add sliced red onion, olives or avocado.
- Swap the mozzarella for feta or paneer cubes.
- Make it vegan by leaving out the cheese and adding extra chickpeas or roasted nuts.
- Add grilled chicken or boiled eggs for more protein.
- Roast the chickpeas with spices until crispy for added crunch.
- Add fresh basil or mint.
Storage and Meal Prep
Keep the chickpeas, chopped vegetables, mozzarella and dressing in separate airtight containers in the fridge for up to 2 days. Assemble just before serving.
