Recipe Details

  • Prep time: 25 minutes (plus 1 hour soaking if using dried chickpeas)
  • Cook time: 20 minutes
  • Total time: about 45 minutes
  • Servings: 4
  • Difficulty: Medium

Ingredients

For the falafel (makes about 16 balls):

  • 1½ cups dried chickpeas, soaked overnight and drained (or 2 cans, well drained and patted dry)
  • ½ cup fresh parsley
  • ½ cup fresh coriander (cilantro)
  • 1 small onion, roughly chopped
  • 4 garlic cloves
  • 1½ teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red chili flakes (optional)
  • 2–3 tablespoons chickpea flour or plain flour
  • 1 teaspoon baking powder
  • Oil for frying (or for baking)

For the creamy slaw:

  • 2 cups white cabbage, finely shredded
  • 1 large carrot, cut into thin ribbons
  • ½ cucumber, cut into thin ribbons
  • ½ cup sweet corn kernels
  • ½ small red onion, finely diced
  • 1 tablespoon fresh mint leaves, chopped, plus extra for garnish
  • 1 tablespoon fresh dill, chopped, plus extra for garnish

For the creamy dressing:

  • ½ cup plain yogurt (or mayonnaise)
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1 small garlic clove, grated
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the garlic herb toast:

  • 4 slices of bread (white, sourdough or French bread)
  • 2 tablespoons butter, softened
  • 1 garlic clove, minced
  • 1 teaspoon dried mixed herbs (parsley or oregano)
  • A pinch of salt

Method

Step 1: Make the falafel mixture. Add the chickpeas, parsley, coriander, onion and garlic to a food processor. Pulse until the mixture is coarse and crumbly, like wet sand. Do not blend it into a paste.

Step 2: Season and bind. Add the cumin, ground coriander, salt, pepper, chili flakes, flour and baking powder. Pulse once or twice. Taste and adjust the seasoning. The mixture should hold together when squeezed.

Step 3: Chill. Cover the mixture and refrigerate for 30 minutes. This helps the falafel hold its shape while cooking.

Step 4: Shape the balls. With damp hands, roll the mixture into balls about the size of a walnut. Press them lightly so they stay compact.

Step 5: Cook the falafel. To fry: Heat oil in a deep pan over medium heat and fry the balls in batches for 3–4 minutes until deep golden brown. Drain on paper towels. To bake: Place on a lined tray, brush with oil and bake at 200°C (400°F) for 25 minutes, turning halfway.

Step 6: Prepare the slaw vegetables. Shred the cabbage, make ribbons of carrot and cucumber with a peeler, dice the red onion and chop the herbs.

Step 7: Make the dressing. Whisk the yogurt, lemon juice, honey, garlic, salt and pepper until smooth and creamy.

Step 8: Toss the slaw. In a large bowl, combine the cabbage, carrot, cucumber, corn, red onion, mint and dill. Add the dressing and toss until everything is lightly coated.

Step 9: Make the garlic toast. Mix the butter, garlic, herbs and salt. Spread on the bread slices and toast in a pan or oven at 200°C (400°F) for 5–7 minutes until golden and crisp.

Step 10: Assemble the bowls. Divide the slaw between bowls. Top with the warm falafel balls and a few mint leaves and dill sprigs. Serve with the garlic toast on the side.

Tips for the Best Falafel Bowl

  • Use dried chickpeas, not canned, if you can. Canned ones make a softer mixture that can fall apart.
  • Do not over-process the mixture. A coarse texture gives crispy, fluffy falafel.
  • Chill the mixture before shaping so the balls don’t break while frying.
  • Fry at medium heat. Oil that is too hot browns the outside before the inside cooks.
  • Dress the slaw just before serving to keep it crunchy.
  • Add a tahini or garlic sauce drizzle for extra richness.

Variations

  • Serve in warm pita bread as a falafel wrap.
  • Use a dairy-free yogurt to make the bowl vegan.
  • Add hummus, olives or pickled turnips.
  • Swap the slaw dressing for a lemon tahini sauce.
  • Add cherry tomatoes or roasted peppers for extra color.

Storage and Meal Prep

Store the cooked falafel, slaw and dressing in separate containers in the fridge for up to 3 days. Reheat the falafel in the oven or air fryer to bring back the crispness. Keep the slaw undressed until you are ready to eat. Uncooked falafel balls also freeze well for up to 2 months.

FAQs

Why did my falafel fall apart? The mixture was probably too wet or over-blended. Drain the chickpeas well, add a little more flour and chill the mixture before shaping.

Can I use canned chickpeas? Yes, if you drain them very well and dry them. The texture is softer, so add a bit more flour.

Can I make falafel in an air fryer? Yes. Brush the balls with oil and air fry at 190°C (375°F) for 12–15 minutes, shaking halfway.

Is this recipe vegan? The falafel is vegan. Use dairy-free yogurt and vegan butter to make the whole bowl vegan.
