• ½ cup butter, softened
• 1 tablespoon vanilla extract

• 4 cups powdered sugar
• 14 oz shredded coconut
• 10 oz maraschino cherries, well drained and finely chopped
• 3 cups finely chopped pecans
• 6 cups chocolate chips
• 4 tablespoons shortening
METHOD
Step 1: Drain the maraschino cherries very well and pat them dry with paper towels. Finely chop them.
Step 2: In a large mixing bowl, combine the softened butter, vanilla extract, and sweetened condensed milk.
Step 3: Gradually add the powdered sugar, mixing until combined.
Step 4: Stir in the shredded coconut, chopped cherries, and chopped pecans.
Step 5: Cover the mixture and refrigerate for about 1–2 hours, or until firm enough to shape.
Step 6: Roll the mixture into small balls and place them on a parchment-lined tray.
Step 7: Chill or freeze the candies until very firm.
Step 8: Melt the chocolate chips and shortening together gently, stirring until smooth.
